To Go Baked Oatmeal with your Favorite Toppings- A standard baked oatmeal recipe is prepared in a muffin tin and topped with your favorite flavors (chocolate, fruit, etc.). A great grab and go breakfast!
I love the idea of everyone getting to personalizeย breakfast with their favorite flavors.ย A few months ago I came up with a standard muffin recipe.ย The idea is to use a basic muffinย batter recipe, fill up a muffin tin with batter, then top off each muffin with your favorite flavorsย (fruit, nuts, chocolate chips, etc.).ย I gotย a lot of positive feedback about that recipe.ย ย I thought, why not do the same with oatmeal?ย So, I came up with this recipe for to-go baked oatmeal with your favorite toppings.
It’s the same conceptย as the standard muffin recipe.ย Youย start by making a standard recipe for baked oatmeal.ย I say standard only because there are not any chunks of fruit or nuts involved at this point.
Fill a prepared muffin tin with the oatmeal mixture.
This plain oatmeal mixture is actually quite tasty all on its own.ย You could make this baked oatmeal without any additional toppings and it wouldย be delicious.
But, I like to play around with different toppings.ย I went with chopped walnuts, dried cranberries, chocolate chips, and fresh blueberries.
Just sprinkle theย toppings (I used about 2 tsp.) on each oatmeal cup.ย Then, press the toppings down into the oats with aย spoon.
Bake for 30 minutes, and you end up with these beautiful babies.
These are such an awesome grab-&-go breakfast.ย They are perfect to make on a Sunday and eat throughout the work week.ย Or, you could even freeze some and defrost as needed.

Ingredients
- 2 large eggs
- 1/4 cup canola oil
- 1 cup packed brown sugar
- 1/2 cup applesauce
- 1 1/2 cups skim milk or whatever milk you like
- 2 tsp. vanilla extract
- 1/2 tsp. salt
- 1 tbsp. ground cinnamon
- 3 cups old fashioned rolled oats
- 2 tsp. baking powder
- Optional: your favorite toppings fruit, nuts, chocolate chips, etc.
Instructions
- Preheat the oven to 350 degrees. Line a muffin tin with paper or paper/foil muffin liners.
- In a large bowl, whisk the eggs, oil, and brown sugar until sugar is dissolved. Add the applesauce, milk, vanilla, salt, and cinnamon. Whisk until well combined. Stir in the oats and baking powder.
- Fill the muffin tin with ยผ cup of the oat mixture in each muffin cup. Add your favorite toppings. Push the toppings down into the oat mixture with a spoon.
- Bake for 30 minutes. Let them cool for 5 minutes before eating. Store in an airtight container or freeze in a zip top storage bag.

Can I use something else for the oil
Very easy to make and delicious!!! Very soft when done, I reccomend putting in a bowl and eating it with a spoon. And I would use heavy paper cupcake liners,, I used foil ones and they stuck to the pan. Will definitely make again.
So what do I do with the frozen muffin when I’m ready to eat it? Just zap it in the microwave for a few seconds??
I have shared this recipe with so many people I’ve lost count. My boss loves it, because I have to eat gluten free and it’s a treat she can make without worry that it’ll make me sick. One year, she accidentally added egg nog instead of milk, and now we all get excited for Christmas season so she can do it again. My husband loves the plain muffins, and I Iove adding chocolate chips. They freeze perfectly, so we make large batches, and I can’t remember the last time I actually measured the cinnamon. If I could rate 50 stars I would.
Great base recipe, but be mindful about the full cup of brown sugar in just 16 servings. That equates to 13g or just over 3 tsp brown sugar/serving of baked oatmeal. Given that, I was genuinely surprised to learn the recipe writer is a nutritionist. I normally leave out most of the brown sugar (maybe use 1/4C) and increase the unsweetened applesauce a bit to compensate. Sometimes I won’t use any brown sugar and sprinkle on a few dark chocolate chips instead.
These are delicious and great for on the go.
This is my all time go to recipe for a hot nutritious breakfast. I use less brown sugar…but then I do in all recipes. Thanks for the recipe
Does this make 6 muffins or 12? The pictures looks like 12 but the video looks like 6 and the serving says 16.
Does the applesauce make them goofy? I like my oatmeal cooked dry and well done like cookies.
These are like muffins…I put mine in a bowl, chop up a bit and pour milk over. my daughter just eats them out of hand

Yes, would someone answer this question? How many muffins does this make? For one batch, the recipe says serves 16! But the video shows the hands only filling six muffin cups.
For me, it made 18 after scraping out everything in the bowl and using a 1/4 cup to measure.
I love this recipe! I found this YEARS ago and it is still a go to recipe for my family. BUT instead of putting it in a muffin pan, I put it in a brownie pan lined with parchment paper and when done, cut them like brownies. Oh and I use dark chocolate chips in the recipe. My family and friends LOVE them!

I freeze 2 to a sandwich bag. Takeout and put in refrigerator night before. Reheat and enjoy
