Avocado bacon crustless quiche is perfect for breakfast, lunch, or dinner. ย Cheese, bacon, and avocado is an amazing combination!
I love to make different versions of quiche because it’s so quick and easy to prepare, especially when the quiche is crustless. ย Don’t get me wrong, I like a good flakey pie crust as much as the next girl. ย But, I don’t like the extra calories it adds as well as the extra time it takes to make it.
The base of this quiche is simply eggs, milk, salt, and pepper. ย That’s how I do all my quiche variations. ย Then, I just add whatever fun flavorings I have available.
Today I went with crumbled bacon, chopped avocado, and shredded mozzarella cheese. ย Let me tell you, that’s a winning combination! ย You could put those three things on anything and it would taste good. ๐
I prepared the bacon for this quiche myself. ย This is how I did it.
Line a large baking sheet with foil and lay six slices of bacon on it. ย Bake it at 350 degrees F for 15 minutes. ย Transfer the bacon to a paper towel lined plate and blot up as much of the grease as possible. ย Chop it into small pieces.
The bacon may not be as done as you like it after baking for 15 minutes, but it will continue cooking inside the quiche.
To make this dish even easier, you could use the packaged pre-cooked and crumbled bacon.

Ingredients
- 6 large eggs
- 1/4 cup 2% milk or your preferred milk/milk alternative
- 1/4 tsp. salt
- 1/4 tsp. ground black pepper
- 1/2 cup shredded mozzarella cheese
- 1/2 cup crumbled cooked bacon from about 6 slices of bacon
- 1 avocado peeled, seeded, and chopped
Instructions
- Preheat oven to 350 degrees F. Spray a standard pie plate with cooking spray.
- In a medium (2.5 qt.) bowl, add the eggs, milk, salt, and pepper. Whisk until well combined.
- Add the cheese, bacon, and avocado. Gently stir until well mixed.
- Pour the egg mixture into the pie plate. If necessary, use a spoon to push some of the avocado and bacon around to ensure that it is evenly distributed throughout the quiche.
- Bake for 30 minutes, rotating once half way through.
- Let the quiche cool for 5 minutes before slicing.

I first cooked this recipe (for two) in two mini glass pie pans at 350 degrees for 25 minutes and they were perfect! I used diced avocado, some crumbled goat cheese, diced boars head pancetta bacon (pre-cooked) and scallions. Yum! What an elegant brunch for two! I have since made it with onions, cooked mushrooms, swiss cheese, some sauteed baby spinach and avocado again. There are endless combinations you can use and it is perfect for a brunch party, Thank you so much for this recipe! It is even better without the crust – don’t miss it at all!
how do you reheat indivdual slices in the microwave and for how long?

Yes mine did too..and I investigated that avocados are not meant to be cooked.
I just put salsa on mine to cover it up.as I was not going to throw it out. I think I will put slices on top of mine instead.
I often add avocado to my scrambled eggs and it never taste better.
I would not have added the avocado into the cooking mixture but instead used it as a topping just over the quiche as it is being served. Yummy recipe though!!

What a great looking recipe! Just want to add that the precooked bacon has additives you prob do not want or need…check bacon available to you for the least amount of processed ingredients. Just better for you!

I’m trying to get my family to eat more healthy options for breakfast to get them through until lunch. I made this dish in advance and had it ready for Monday morning. What would the cooking times be if I did this in a large oval casserole dish and increased the recipe by another 1/2 to serve 9 people?
Could I mix and pour this in the baking dish before my guest arrive. Let it set in the fridge for an hour then pop it in the oven 30 minutes before we are ready to eat?

does that mean to stir or mix it half way through? turn the back end to the front half way through?
Hi CMO. By “rotating” I mean turning the back of the dish toward the front, no stirring. This just ensures that the quiche bakes evenly.
